Traditional Chinese tea brewing involves pouring hot water into a pot or gaiwan, and often pouring hot water over the top of the pot as well to seal in the heat. Large tea trays with drainage systems are often used for group tea tastings to catch all the water. But for individual use, cha chuan, or "tea boats" are often used as a space saving alternative.
