Fujian Province in Southeast China is home to white tea. This region accounts for 90% of the white tea production in the world.
There are four major types of white tea: Silver Needle (Yin Zhen), White Peony (Bai Mudan), Gongmei (Tribute Eyebrow) and Shoumei (Longevity Eyebrow). The names describe the appearance of the leaves and each type differs in the times of harvest and the grades of the leaves.
Classic Gongmei from Fuding is planted from seeds of a tea varietal called "Small White." Because it is planted by seeds instead of cuttings, the tea is more complex in flavor and thicker and rounder in texture. This tea possesses a sweet flower flavor that is soothing and savory.
Classic Gongmei is rare because the Small White varietal does not adapt well if transplanted outside of Fuding. Growing from seeds also takes longer for the tea plants to grow, thus disincentivizing tea farmers to use this method of cultivation. .
